Hello Rooted Nutritioners!

This week got off to a great start but by the weekend I was off the rails! It started with a small chocolate bar and ended with a big coffee and spicy beef wrap. I had this peculiar craving for white bread sandwiches. I mean really, that’s weird isn’t it? I am annoyed at myself but I’m back on track. I won’t dwell on my lapse. I will move on and keeping working towards my 20lb weight loss target by the end of month two.

It’s funny when you have been eating a very clean food regime you can sense the effect food has on you when you eat less healthy options. I feel sluggish. Of course, it hasn’t helped that I have been having a lot of trouble with my prosthetic leg. It has been a source of pain and annoyance all week and I haven’t been able to do my daily walks. Hopefully, the problem will be resolved soon and I will be up and moving about in a more meaningful way.

I attempted to cook some navy beans yesterday. I can’t seem to get the knack of cooking beans correctly. They usually turn out too mushy. This time some were spot on, some mushy and yet others weren’t cooked at all. What am I doing wrong? I pre-soak, rinse and bring to the boil in the prescribed manner but something’s not right. I never get that happy balance.

I am going to do some sprouting this week. I will let you know how it all turns out. Here’s hoping the week ahead is a good one!
